Cook with XinEr: Mushroom Soup

Hello people! I've decided to start another type of post where I share with you how I cook certain stuff and experiment with new dishes. I don't cook that often because it takes time but I certainly enjoy cooking. So, here's the mushroom that I learnt some time back and prepared it for jy's birthday :)

So, let's get started!

The ingredients needed are the mushrooms, you can use white button mushrooms, shitake or just a mixture of everything like what I did here. You'll need chicken stork, shallots, garlic, lemon, butter, cooking cream and cornstarch.

This would be how you should prepare the garlic, just 1/2 a clove would be enough.

Mince shallots

The main star of the day - slice the mushrooms up!

First, melt butter in your pan/wok, lightly sauté garlic and shallots.


Then add in the mushrooms and stir fry them together. The mushrooms are going to release a lot of water so just stir fry it till it's almost dry but not totally.

As you can see, the mushroom size shrunk a lot because of the water lost.
For the next few couple of steps, I did not get any pictures.. sorry.. too busy. I'll be sure to do a better job next time.
In any case, add in some chicken stock to shimmer with the mushrooms for about 5 - 10 minutes depending on how much you're cooking. Then blend everything in a blender. If you're cooking for many people then you probably got to blend for a few more times. Make sure you blend all the mushrooms. After you're done with blending, pour everything into a pot, now, you can add in some cooking cream (agar-agar, lol), cornstarch to thicken the soup, 1 tablespoon of lemon juice, some pepper and salt.

TADAH!!! You have your mushroom soup! Enjoy!
